Garbage Salad

Makes about 2 Servings

 

Ingredients

 

Balsamic Vinaigrette

 

½ head iceberg lettuce, chopped

3-4 ounces salami, sliced into ¼ inch julienne strips

3-4 ounces mozzarella, sliced into ¼ inch julienne strips

1 roasted red bell pepper sliced into small strips

¼ red onion thinly sliced

4-6 radishes, trimmed and sliced

½ stalk celery, sliced thinly across the grain

2 tablespoons grated Parmigiano-Reggiano cheese

 

4 jumbo shrimp, cooked and chilled

 

Directions

 

Toss lettuce, salami, mozzarella, pimento, onion, radishes, celery and Parmigiano-Reggiano in large mixing bowl.

 

Pour 6-8 tablespoons of Balsamic Vinaigrette over salad and toss until well mixed. Divide salad among two plates and top each with 2 shrimp.
